Sweet ‘n Sour Loaf Serves 8 Kids and adults alike will love this incredibly flavorful mock meatloaf. Use leftovers to make tasty sandwiches.

Standing Time: 15 minutes
2 10.5-ounce boxes silken “lite” extra-firm tofu
1 cup seasoned bread crumbs
1/4 cup Parmesan-style soy cheese
1/4 cup garlic, chopped
3/4 cup raisins
1/2 cup uncooked oatmeal
1/2 cup tomato sauce
1 tablespoon honey
1 teaspoon dry mustard
1/4 cup ketchup
1.Preheat oven to 350°F. Spray 1 large loaf pan with vegetable cooking spray. Drain tofu in colander.
2. In a food processor, combine bread crumbs, cheese, garlic, raisins and oatmeal until blended. Add tofu and tomato sauce and blend. Pour mixture into loaf pan. Bake 45 minutes.
3. Combine honey, mustard and ketchup and baste top of loaf. Return loaf to oven and bake 30 minutes more. Let stand 15 minutes before serving.
