Carrot Salsa Yields 3 Cups
This colorful salsa spices up any holiday party. Serve with tortilla chips.
Prep Time: 10 minutes
Marinating Time: 1 hour
1 large carrot, peeled and grated
1/2 red onion, diced
1/4 cup chopped, roasted and peeled mild or hot green chile peppers
1 clove garlic, minced
2 tomatoes, chopped
1 teaspoon lime juice
1 teaspoon salt
1. Mix all ingredients together in a serving dish. Chill, covered, in the refrigerator for one hour before serving.
