3 cloves garlic, minced
1 tablespoon olive oil
1 pound green beans, trimmed and chopped into 1-inch pieces
2 large red potatoes, chopped
4 cups vegetable broth or water
1 14.5-ounce can diced tomatoes
1 cup parsley leaves
2 cloves garlic
1 tablespoon extra-virgin olive oil
1. Sauté garlic and onion in oil for 5 minutes. Add green beans, potatoes, broth or water, and tomatoes and simmer for 20 minutes over medium-high heat or until vegetables are tender.
2. In a food processor or blender, puree parsley, garlic and olive oil. Top each serving of soup with a spoonful of puree.
