Spicy Chai Caribbean Chicken
Next to present her dish was Niki. She developed a dish inspired by the islands of the Caribbean. It featured a slaw of grated carrots, shredded cabbage, ginger, turmeric, apple cider vinegar and honey that was served over tender pulled chicken thighs and garlicky fried plantains. The dish was topped with a light chai-flavored sauce. The judges loved the combination of fresh ingredients and agreed the sauce would be delicious over many combinations of protein and vegetables.
