Holy Chai Mole over Roasted Sweet Potato & Chicken Salad
First to present her dish was Mirasol. She created an East-meets-West homemade mole sauce that featured dried chiles and fruits, almonds, pumpkin seeds, spices, dark chocolate and unsweetened Bhakti Chai concentrate. The judges agreed it was one of the most interesting, complex and flavorful mole sauces they had ever tasted (one judge was literally licking her bowl clean!). The mole was served over an autumnal mix of sweet potatoes, cooked and shredded chicken thighs, roasted poblano peppers, corn and pumpkin seeds sautéed in unrefined coconut oil. This dish would be hard to beat!
