What does organic mean to organic farmers?

Organic is what we do here. You really work with the forces of nature, and try to heal the soil and build it up, and we also bring different animals in, because they bring a different element into the farmscape. We build the soil to make it much more drought resistant, and more flood resistant.
We use particular preparations that we bring out on the soil, and when I did it for the first time I felt like a priest. You walk the land; you actually look and see it. It was like christening the soil. It was a very strong feeling.
