While gluten does not cause an anaphylactic, life-threatening reaction (such as a peanut or shellfish allergy, which requires emergency intervention), for those with CD gluten causes real, significant damage.
In people with CD, gluten destroys the villi in the small intestine, leading to a huge range of symptoms, ranging from severe gastrointestinal distress (diarrhea, constipation) to migraines, joint pain, skin rashes, brain fog, chronic fatigue, infertility, and more.
Current estimates put the rate of celiac disease in the U.S. at 1 in 133 people; that number echoes European studies, and it’s starting to show up in China and India, too.
