Ingredients
  • 4 green onions, chopped
  • 5tablespoons peeled and chopped fresh ginger
  • 1 medium onion, chopped
  • 4cloves garlic, chopped
  • 1 carrot, chopped
  • 1/2cup sake (or dry sherry or white wine)
  • 3tablespoons low-sodium soy sauce
  • 1 (2×3-inch) piece kombu (a sea vegetable)
  • 6cups water
  • 3tablespoons Vivid Huoshan Yellow Bud Tea leaves (or any loose-leaf green tea)
  • 1/2pound udon noodles
  • 1cup chopped napa cabbage
  • 1/2cup chopped bok choy
  • 1/2 cup julienned carrots
  • 1/2 cup bean sprouts
  • Baked tofu scallions (optional)
  • 3chopped scallions
  • 1/4 cup chopped fresh cilantro
Instructions
  1. Combine all broth ingredients except tea in a large saucepan. Bring to a boil; reduce heat and simmer for 45 minutes. Add tea and steep for 3 minutes. Strain and discard solids. Keep broth warm.
  2. Cook noodles according to package directions. Transfer to serving bowls and cover with broth, vegetables, and tofu, if using. Serve immediately, garnished with scallions and cilantro.
