Pink Greek dressing
1/3cuporganic olive oil mayonnaise
1/4cupfresh raspberriesor 1 small cooked beet
Juice of 1/2 lemon
1/2tspfresh cracked black pepper
For salad, place arugula on large platter. In medium bowl, gently toss together apple, avocado, and grapefruit. Arrange atop arugula. Sprinkle with arils, walnuts, and hempseeds. Garnish with flowers and mint, if desired.
For dressing, combine all ingredients in blender and puree until smooth. Drizzle over salad and enjoy!
