Warming Winter Tonic Soup
  • 1/2cup minced red onion
  • 1/2cup sliced shiitake mushrooms
  • 2cloves garlicminced
  • 1tablespoon minced fresh ginger
  • 1/2cup peeled and thinly sliced burdock root
  • 1/2cup sliced carrots
  • 1/2cup thinly sliced cabbage
  • 1/2cup beetswell-scrubbed and sliced into 1/2-inch quarters
  • 2leeks well-rinsed and sliced into 1/4-inch slivers
  • 2tablespoons olive oil
  • 5cups vegetable or chicken stock, or water
  • 2tablespoons light miso
  • 2tablespoons chopped fresh cilantro
  • 2 scallions, minced
  1. In a large pot, sauté first nine ingredients in olive oil for 10 minutes. Add stock or water and bring to a boil. Lower heat, cover, and simmer for 20-25 minutes or until vegetables are tender.
  2. Dissolve miso in small amount of hot broth and add to soup. Turn off heat and add cilantro and scallions. Cover and let stand for 5 minutes. Serve hot.
