Ingredients
  • 1cup raw, unsalted walnuts
  • 1/4cup cup filtered water
  • 2 capsules probiotics or 1/2 tsp probiotic powder
  • 1tsp extra-virgin olive oil
  • 3 – 2 inch sprigs fresh thyme, plus a few more for garnish (optional)
  • 1tsp unrefined sea salt
  • 1/2cup coconut oil
Instructions
  1. In small glass or ceramic bowl, combine walnuts and water. Empty contents of probiotic capsules (discarding empty capsule shells) or probiotic powder into bowl and stir to combine. Cover and let sit in warm, undisturbed spot for 2 days.
  2. In small frying pan over low to medium heat, sauté olive oil and thyme until sprigs are lightly crisped (about 3 to 5 minutes). Remove from heat. Once cool, pull thyme leaves off sprigs and sprinkle across base of small glass dish (I typically use a 2 cup Pyrex bowl).
  3. Pour walnut mixture into blender, add salt and coconut oil, and blend until completely smooth. Pour mixture into glass dish coated in thyme leaves. Refrigerate, uncovered, until set (about 4 hours). Gently remove cheese from glass bowl and serve upside down so thyme leaves are on top of cheese. Garnish with thyme sprigs if desired.
  4. Walnut Thyme Cheese keeps in refrigerator, covered, for about 1 month.
