Tomato and Strawberry Bruschetta
  • 1 (12- to 14-inch) French baguette
  • 2cups finely chopped strawberries
  • 1pint organic cherry or grape tomatoesvarious colors, finely chopped
  • 1/4cup diced red onion
  • 1tablespoon finely chopped, seeded jalapeño chileor more to taste
  • 1/4cup chopped fresh cilantro leaves
  • 2tablespoons fresh lime juice
  • 1/2teaspoon salt
  1. Preheat oven to 400°. Cut baguette into 1/2-inch slices; place on ungreased cookie sheet.
  2. In a medium bowl, mix remaining ingredients. Let stand 10-15 minutes, stirring occasionally, to combine flavors.
  3. Toast baguette slices in oven about 10 minutes or until golden brown, turning halfway through. Serve salsa on crostini.
