Ingredients
  • 1/4cup (48.27 grams) uncooked teff grains
  • 3/4cup (118.5 grams) brown rice flour
  • 1/4cup (28 grams) almond flour
  • 1 1/2tablespoons unsweetened cocoa powder or carob powder
  • 1/2teaspoon ground ginger
  • 1/4teaspoon cinnamon
  • 1/4teaspoon cloves or allspice
  • 1/4cup coconut nectar (such as Coconut Secret)
  • 1/2cup coconut milk
  • 1/2teaspoon almond or vanilla extract
  • 1/2cup vegan mini chocolate chips (optional)
Instructions
  1. Preheat oven to 350˚. In a medium bowl, combine all dry ingredients (teff through spices). In another bowl, mix coconut nectar, coconut milk, and extract. Fold wet and dry ingredients together. Fold in chocolate chips, if using. Drop by spoonfuls onto a parchment-lined baking sheet; flatten slightly. Bake 8-10 minutes. Transfer paper to a cooling rack.
