Street Vendor’s Vegetable Salad
  • 2large organic English cucumbersdiced small
  • 2 plum tomatoesdiced small
  • 1/2cup chopped cabbage
  • 2-3 green onionssliced
  • 1/2medium red or orange bell pepperseeded and diced small
  • 2-3cloves garlicminced
  • 1/2cup fresh parsley leavesminced
  • 1/4cup fresh mint leavesminced
  • 3tablespoons olive oil
  • 1tablespoon fresh lemon juice
  • 1 1/2teaspoons sea salt
  • 1 1/2teaspoons ground pepper
  • 1/2cup crumbled feta cheeseoptional
  1. Combine first eight ingredients (cucumbers through mint) together in a bowl.
  2. Whisk olive oil, lemon juice, salt, and pepper together in a small bowl. Drizzle over vegetables, tossing lightly to coat. Stir in feta cheese, if using. Serve, or refrigerate for 2 hours to allow flavors to blend.
