  • ½cup cooked steel-cut oats
  • ½cup roasted vegetables (mix of diced sweet pepper, sweet potato and zucchini)
  • ½cup sautéed torn Swiss chard
  • 1 cooked egg, halved
  • 3tablespoons purchased salsa verde
  • 2tablespoons cilantro and avocado
  1. Place cooked oats in a bowl and top with piles of roasted vegetables and sautéed chard. Top with cooked egg halves and salsa verde and garnish with chopped cilantro and avocado.
