Raw Carrot and Celery Salad
  • 1cup raw cashews
  • 1teaspoon minced garlic
  • 1/2teaspoon sea salt
  • 1/4-1/2cup filtered wateras needed
  • 3cups carrot pulpfrom about 1 pound of washed, peeled, juiced carrots
  • 1cup chopped celery
  • 1/4cup chopped yellow onion
  • 3tablespoons chopped fresh parsley
  • 1tablespoon dulse flakes, or 1/2 teaspoon sea salt
  1. Place cashews, garlic, and 1/2 teaspoon salt in a blender. Add water and blend until smooth, adding only enough to create a thick mayonnaise-like texture. Scoop into a large mixing bowl. Add all remaining ingredients and mix well. Will keep for 3 days, refrigerated.
