Rainbow Slaw with Miso Dressing
  • 1cup shredded red cabbage
  • 1cup shredded napa cabbage
  • 1cup shredded carrot
  • 1cup shredded golden beet
  • 1scallion sliced
  • 2tablespoons chopped fresh cilantro
  • 1tablespoon brown rice miso
  • 2tablespoons apple juice or mirin
  • 1/2tablespoon toasted sesame oil
  • 1/2tablespoon extra-virgin olive oil
  • 1tablespoon raw unfiltered apple cider vinegar
  1. Toss all slaw ingredients together in a large bowl.
  2. In an unbreakable container with lid, combine miso and apple juice; mash and whisk with a fork until miso is dissolved (tiny chunks will remain). Add oils and vinegar; whisk or shake until emulsified.
  3. Just before serving, toss slaw with dressing until evenly mixed.
