Quick Bean Guacamole

  • 115-ounce can organic navy or great Northern beans, rinsed and drained
  • 1 ripe Haas avocado, scooped out in chunks
  • 3/4 cup bottled salsa (mild or hot, according to taste)
  • 1 to 2 tablespoons lime juice
  • Salt to taste
  • 3tablespoons chopped fresh coriander for garnish
  1. Place beans, avocado, salsa and 1 tablespoon lime juice in a food processor. Pulse just enough to create a coarse puree. Add extra lime juice and salt to taste. Transfer to a small serving bowl and garnish with coriander.
