Pea and Radish Salad with Miso Tahini Dressing

Ingredients
  • 2cups snap peas500 mL
  • 2cups sliced radishes500 mL
  • 1tsp white miso paste5 mL
  • 1tsp tahini5 mL
  • 1tsp tamari or low-sodium soy sauce5 mL
  • 1 Tbsp rice wine vinegar15 mL
  • 1/4tsp honey1 mL
  • 1tsp sesame oil5 mL
  • 2 Tbsp finely chopped chives30 mL
  • 1 Tbsp chopped fresh mint15 mL
  • 1tsp black sesame seeds5 mL
Instructions
  1. Trim peas and slice lengthwise through centre of the pod. Add to large bowl with sliced radishes.
  2. For dressing, in small bowl, mix miso paste, tahini, tamari, vinegar, honey, and sesame oil.
  3. Pour dressing over pea and radish mixture and combine. Sprinkle with chives and mint and toss. Tip salad into serving bowl and sprinkle with sesame seeds.
