Passion Fruit and Lime Tea
  • 6cups gently boiling water
  • 6orange pekoe black tea bags
  • 2cups passion fruit pulp (with seeds), fresh or canned; or one 10-ounce bottle chia drink (see note)
  • 1/4cup good-quality honey
  • Juiceof 1-2 limes, to taste
  • Additional sweetener, to taste
  1. In a large heat-resistant pitcher, pour gently boiling water over tea bags and steep for no more than 4–5 minutes. Remove tea bags.
  2. While water is still warm, add passion fruit pulp and honey. Stir until honey dissolves completely.
  3. Let mixture cool to room temperature, add lime juice, and then refrigerate; if possible, leave overnight to let flavors marry. Serve in glasses over ice with sweetener to taste.
