Overnight Muesli with Cherry Chia Jam
  • 1cup plain yogurt or plain nondairy yogurt
  • 2Tbsp + 2 tsp lemon juicedivided
  • 2Tbsp honeydivided
  • 1/4tsp vanilla or almond extract
  • 1 appleskin intact, cored and grated
  • 2cups large flake rolled oatsgluten free if desired
  • 1cup chopped blanched almonds
  • 1/4tsp salt
  • 2cups fresh or frozen pitted cherriesdefrosted if frozen
  • 2Tbsp chia seeds
  1. In large bowl, combine yogurt, 1 cup water, 2 Tbsp lemon juice, 1 Tbsp honey, extract, and apple. Stir in oats, almonds, and salt. Cover and refrigerate for at least 8 hours or overnight.
  2. Place remaining 2 tsp lemon juice, 1 Tbsp honey, cherries, and chia seeds in food processor. Blend until smooth. Transfer to reusable container and refrigerate for at least 6 hours or overnight.
  3. In the morning, give both muesli and jam a stir. Scoop muesli into bowls and top with a swirl of jam. Alternatively, layer muesli with jam in glasses to create breakfast parfaits.
