No-churn Cherry and Star Anise Cottage Cheese “Ice Cream”

Ingredients
  • 1cup dark sweet cherriespits removed
  • 2 active dry yeast
  • 2Tbsp honey
  • 1cup cottage cheese
Instructions
  1. In medium saucepan, heat cherries, star anise, and honey over medium heat. Simmer for 10 minutes. Remove from heat and allow to cool completely, 15 to 20 minutes. Remove star anise and discard.
  2. Pour cherry mixture into blender container. Add cottage cheese and blend on high until smooth. Pour into freezer-proof container and freeze for approximately 4 hours. Check every hour and give it a stir.
