Mixed Frozen Berry Cobbler with Crystallized Ginger
Vegetarian; includes gluten-free & dairy-free options
  • 21oz bag frozen mixed berries
  • 2tbsp finely chopped crystallized ginger
  • 3tbsp cane sugar or maple syrup
  • 2tbsp butter or vegan margarine
Cobbler Topping
  • 1cup whole grain or gluten-free flour
  • 2tsp baking powder, gluten free if desired
  • 1/8tsp salt
  • 2tbsp finely chopped crystallized ginger
  • 1tsp cane sugar or maple syrup
  • 2tbsp vegan margarine or butter
  • 1/2cup unsweetened almond milk or other milk
  1. Preheat oven to 350 F.
  2. For cobbler, to high-sided 8 inch square or round baking or casserole dish, add berries. Sprinkle crystallized ginger and sugar or maple syrup over berries and dot with butter or vegan margarine. Place in preheated oven for up to 15 minutes while preparing topping.
  3. For cobbler topping, in medium bowl, combine flour, baking powder, salt, crystallized ginger, and sugar or maple syrup. Cut in butter or vegan margarine. Add almond milk and stir to combine.
  4. Drop batter by the spoonful over hot berries. Return to oven and bake for 30 minutes, or until topping is golden. Serve with ice cream (or nice cream), if desired.
