Ingredients
  • 1/2tablespoon olive oil
  • 1cup cooked chicken breast, cut into chunks
  • 1cup sliced carrots
  • 1 red pepper, diced
  • 1/2large onion, roughly chopped
  • 2cloves garlic, minced
  • 1teaspoon cumin
  • Pinchof salt
  • 1large avocado
  • Juiceof 1 lime
  • 1cup salsa
  • 2 roma tomatoes, diced
  • 1/2of a cucumber, chopped
  • 1/4cup cilantro, chopped
  • 6tablespoons Manitoba Harvest Hemp Hearts
  • Fresh spinach
  • 2large mason jars
Instructions
  1. Add the olive oil and carrots to a large pan and cook on medium heat for about three minutes.
  2. Add in the red pepper, onion, garlic and cumin and cook until everything is tender.
  3. Blend the avocado, lime juice and salt in a food processor until smooth. (You can also mash it in a bowl if you don’t have a food processor.)
Recipe Notes

Use half of the ingredients for each mason jar and assemble the salad in this order:

1. Salsa
2. Avocado and lime mixture
3. Roasted veggies
4. Chicken
5. Tomatoes
6. Cucumbers
7. Cilantro
8. Hemp Hearts
9. Spinach

Once you have all the ingredients layered in the jar, put the lid on it and refrigerate until ready to eat!
