Marinated Chicken and Grape Skewers
  • 1pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 32large red seedless grapes
  • 1/8teaspoon ground cloves
  • 1/4teaspoon ground nutmeg
  • 1/2teaspoon ground cumin
  • 1/4 – 1/2teaspoon crushed red pepper flakes
  • 1/2teaspoon Spanish sweet paprika
  • 1/2teaspoon salt
  • 1tablespoon lemon juice
  • 1tablespoon dry sherry
  • 2tablespoons extra-virgin olive oil
  • 4cloves garlic, crushed
  1. Combine the marinade ingredients in a medium-size bowl. Add the chicken, stirring to coat well. Marinate at least 2 hours, or overnight.
  2. On eight 8-inch skewers, alternately thread chicken pieces with the grapes (about 4 grapes per skewer). Over a medium-hot grill, grill skewers, turning once, until chicken is cooked through, about 5 minutes. Serve warm.
