Mango Salsa
  • 1cup organic dried mangos3.75 ounces
  • 1/4cup fresh lime juiceabout 2 limes
  • 2 large tomatoes, seeded and chopped
  • 1 ripe avocado, pitted and cubed
  • 1/3cup chopped red onion
  • 3tablespoons minced fresh cilantro
  • 1 jalapeƱo pepper, seeded and finely chopped
  • 1/2teaspoon sea salt
  • 1/4teaspoon pepper
  1. Using kitchen shears, dice dried mangos into 1/4-inch pieces. Transfer to a small bowl and add lime juice; marinate for 15 minutes. Add remaining ingredients and mix; refrigerate 2 hours.
