Herring Beet Apple Salad on Rye Crisps

Ingredients
  • 1/2lb boneless pickled herringsliced into 1 inch pieces
  • 1medium beetpeeled and grated
  • 1 tart appledchopped into 1/2 inch pieces
  • 1/4cup chopped dill
  • 2Tbsp finely chopped shallot
  • 1/3cup plain Skyr yogurt
  • 2Tbsp prepared horseradish
  • 1Tbsp lemon juice
  • 12large rye crackers
Instructions
  1. In large bowl, toss together herring, beet, apple, dill, and shallot.
  2. In small bowl, stir together yogurt, horseradish, lemon juice, and salt. Add yogurt mixture to herring mixture and toss gently.
  3. Serve salad on top of rye crackers.
