Herby Salad with Sweet Mustard Vinaigrette

Ingredients
  • 3cups loosely packed herbs such as cilantromint, and basil
  • 3cups shaved vegetables such as radishcarrots, and cucumber
  • 2cups pea shoots or watercress
  • 2cups torn kale
  • 1cup chopped snap peas
  • 2Tbsp extra-virgin olive oil
  • 2Tbsp champagne vinegar
  • 1Tbsp grainy mustard
  • 1 Tbsp maple syrup
  • 1 Tbsp finely chopped chives
Instructions
  1. In large bowl, toss together herbs, vegetables, pea shoots, kale, and snap peas.
  2. In small bowl or jar, add oil, vinegar, mustard, maple syrup, and chives; mix or shake to combine for vinaigrette. Pour over salad mixture, toss to combine, and enjoy.
