Healthy Crispy Chicken Nuggets
  • 1 – 1 1/2pounds boneless, skinless chicken breast
  • 1cup low-fat or regular sour cream
  • 1/2cup water
  • 1cup fortified whole-grain cereal, finely crushed
  • 1/2cup dry bread crumbs
  • 3/4teaspoon Italian seasoning
  • 1/4teaspoon salt
  • 1/4teaspoon pepper
  • 1/2teaspoon garlic powder
  1. Preheat oven to 375º. Cut chicken into long tenders or bite-size shapes.
  2. Mix sour cream and water in a bowl. In a separate shallow bowl, combine crushed cereal, bread crumbs, and seasonings.
  3. Dip chicken pieces into sour cream mixture and then into cereal mixture, coating well. Place pieces on baking sheet sprayed with cooking oil. Bake 10–20 minutes, depending on piece sizes, turning once halfway through cooking.
