Golden Quinoa Pilaf with Tart Cherries

Ingredients
  • 1tablespoon coconut oil
  • 11-inch piece fresh gingerpeeled and grated
  • 1teaspoon ground turmeric
  • 1/4teaspoon ground cumin
  • 1/4teaspoon ground coriander
  • 1cup golden quinoawell washed and drained
  • 1 1/2cups water
  • 1/4cup dried tart cherrieschopped
  • 1cup chopped spinach leaves
  • 1/2cup thinly sliced green onions
  • 1/4cup fresh lime juice
  • 1/2cup cashewslightly toasted and chopped
Instructions
  1. In a medium pot, stir coconut oil, ginger, turmeric, cumin, and coriander over medium-high heat until fragrant.
  2. Add quinoa and stir to coat. Add water, bring to a boil, and then reduce heat. Cover and simmer for 15 minutes, or until all water is absorbed. Remove from heat; leave covered 5 minutes.
  3. Stir in cherries, spinach, green onions, and lime juice. Season to taste with salt and pepper, sprinkle with cashews, and serve.
