Flax Medley Breakfast
  • 3 1/2cups rolled oats
  • 1cup toasted wheat germ
  • 1/2cup raw sesame seeds
  • 1/2cup raw hulled sunflower seeds
  • 1/3cup canola oil
  • 1/4cup honey
  • 1teaspoon vanilla extract
  • 1tablespoon ground flaxseed
  • 6ounces nonfat plain or vanilla yogurt (or a mixture), or vanilla soy milk
  • Fresh strawberries or blueberriesoptional
  • Honey, to tasteoptional
  1. In a large bowl, mix together oats, wheat germ, sesame seeds, and sunflower seeds. Add oil, honey, and vanilla extract; mix well. Spread on a rimmed baking sheet lightly coated with cooking spray. Cook at 275° for 1 hour, stirring every 15 minutes. When mixture is cool, crumble and store in an airtight container.
  2. To serve, mix 1/2 cup granola with ground flaxseed and yogurt or soy milk. Top with fruit and sweeten with honey, if desired.
