In a large bowl, mix together oats, wheat germ, sesame seeds, and sunflower seeds. Add oil, honey, and vanilla extract; mix well. Spread on a rimmed baking sheet lightly coated with cooking spray. Cook at 275° for 1 hour, stirring every 15 minutes. When mixture is cool, crumble and store in an airtight container.
To serve, mix 1/2 cup granola with ground flaxseed and yogurt or soy milk. Top with fruit and sweeten with honey, if desired.
