Edamame Bruschetta
  • 1/4 onionthinly sliced
  • 1/4cup loosely packed basil leaves
  • 110-ounce package frozen shelled edamamethawed
  • 2tablespoons extra-virgin olive oil
  • Juice of 1/2 lemon
  • 1/4 teaspoon sea salt
  • black pepperto taste
  1. Toss onion and basil in a medium bowl with remaining ingredients.
  2. Transfer to a food processor and pulse until coarsely chopped. Let stand 30 minutes for flavors to blend. Serve at room temperature.
