Curried Potato Salad
Ingredients
  • 1.5lbs small new yellow potatoes
  • 1/4cup Greek yogurt
  • 1/2tsp ground turmeric
  • 1/4tsp ground cumin
  • 1/4tsp ground coriander
  • 1/4tsp cayenne pepper
  • 1/2cup scallion
  • 2Tbsp finely chopped dried fruitsuch as apricot or mango
  • 1/4cup chopped fresh cilantro
  • 1Tbsp nigella seedskalonji
Instructions
  1. Boil or steam potatoes until tender. Drain and allow to cool completely.
  2. Combine yogurt, turmeric, cumin, coriander, and cayenne pepper in large bowl.
  3. Quarter potatoes and add to bowl with scallion, chopped dried fruit, and cilantro. Toss to coat potatoes with dressing.
  4. Transfer to serving bowl and sprinkle with nigella seeds.
