Crucian Sunshine Oatmeal
  • 1 (14.5-ounce)can light or regular coconut milk
  • Pinchof salt
  • 1bay leaf
  • 1/8teaspoon ground nutmeg
  • 1/4teaspoon ground cinnamon
  • 1/4teaspoon grated fresh orange zest
  • 1cup rolled oats
  • 1/4teaspoon almond extract
  • 1teaspoon pure vanilla extract
  1. Open coconut milk can and stir gently to distribute cream. In a medium saucepan, combine coconut milk, salt, bay leaf, nutmeg, cinnamon, and orange zest. Bring to a simmer for about 10 minutes to extract as much flavor from spices as possible; then add ¼–¾ cup water to make 1¾ cup liquid.
  2. Toss in rolled oats and simmer, stirring frequently, until mixture reaches desired tenderness and liquid is mostly absorbed, 5–10 minutes. Remove from heat. Add almond and vanilla extracts and serve.
