Ingredients
  • 1 1/2 cup blanched almond flour
  • 1/4teaspoon sea salt
  • 2tablespoons grapeseed oil
  • 2tablespoons agave nectar
  • 4 (about 1 3/4 pounds) ripe medium pears, each peeled and cut lengthwise into 16 thin slices
  • 2cups fresh cranberries
  • 1/2teaspoon ground nutmeg
  • 1tablespoon arrowroot powder
  • 1teaspoon orange zest (optional)
  • 1/4cup agave nectar
Instructions
  1. Preheat oven to 350˚. In a medium bowl, combine almond flour and sea salt. In a small bowl, combine oil and 2 tablespoons agave. Stir wet ingredients into dry; set aside.
  2. Place pears in a large bowl with cranberries, nutmeg, arrowroot, orange zest (if using), and ¼ cup agave; toss together until fruit is coated. Place pear mixture in a 3-quart or 8×8-inch glass baking dish. Sprinkle topping over fruit. Cover and bake for 45–60 minutes (uncover for the final 5 minutes), until pears and cranberries are soft and bubbling and topping is lightly browned.
