Ingredients
  • 8 boneless, skinless chicken thighs
  • 3tablespoons all-purpose flour, divided
  • 2tablespoons olive oil
  • 1tablespoon minced garlic
  • 1tablespoon tomato paste
  • 1 ½cup pinot noir
  • 1cup reduced-sodium chicken broth
  • 2cup button mushrooms, quartered
  • 1cup pearl onions
  • 3sprigs fresh thyme
  • 1cup red grapes, halved
  • 1tablespoon butter, room temperature
  • ¼teaspoon salt
  • ¼teaspoon pepper
  • LEMON-ALMOND COUSCOUS
  • 2cups dry couscous
  • ½ cup sliced almonds, toasted
  • ½ cup golden raisins
  • 2tablespoons lemon zest
  • 1tablespoon lemon juice
  • ¼teaspooon salt
Instructions
  1. Season chicken with a pinch each of salt and pepper. In a gallon-size resealable plastic bag, combine chicken and 2 tablespoons of the flour; seal bag and shake until chicken is well dusted.
  2. In a large skillet, cook chicken in hot oil over medium heat about 8 minutes, turning to brown evenly. Drain fat.
  3. Add garlic to same pan and cook over medium heat for 30 seconds. Add tomato paste and cook, stirring continuously, for 1 minute. Add wine, broth, mushrooms, onions, and thyme. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes or until chicken is no longer pink (175°F). Add grapes and cook for 2 minutes. Transfer chicken and vegetables to a serving platter; keep warm.
  4. Meanwhile, cook couscous according to package directions. Fluff with a fork and stir in almond slices, golden raisins, lemon zest, lemon juice, and salt.
  5. Stir wine mixture in skillet and bring to a boil; reduce heat and simmer 5 minutes. Mash butter with remaining 1 tablespoon flour. Whisk butter-flour mixture, salt, and pepper into sauce; cook for 4–5 minutes.
  6. Pour sauce over chicken and vegetables. Top with additional fresh thyme and serve with couscous.
