Cold Noodles with Smoked Salmon

Ingredients
  • 8ounces thin soba noodles
  • 2tablespoons teriyaki or shiitake mushroom sauce
  • 1medium cucumber, peeled, seeded, and cut into thin strips
  • 1small yellow pepper, seeded and cut into thin strips
  • 1tablespoon toasted sesame oil
  • 1tablespoon rice vinegar
  • 4ounces smoked salmon, cut into long strips
  • Salt and white pepperto taste
  • 2tablespoons toasted sesame seeds
Instructions
  1. Cook noodles according to package directions. Drain and rinse with cold water to prevent sticking.
  2. Place noodles in a serving bowl. Mix thoroughly with teriyaki sauce. Toss in cucumber, yellow pepper, oil, vinegar, and salmon. Season with salt and pepper if needed. Garnish with sesame seeds.
