Cilantro Pepita Pesto
  • 2teaspoons minced garlic
  • ¾cup finely chopped cilantro1 bunch
  • 2tablespoons fresh lime juice
  • ¾cup toasted pepitas (pumpkin seeds)
  • teaspoons coarse salt
  • ¾cup oilsuch as avocado, cold-pressed canola or extra-virgin olive oil
  1. In a food processor, mince garlic and cilantro. Add lime juice, pepitas and salt; pulse until pepitas are finely chopped. Slowly add oil; blend until combined.
