Chocolate Hummus Stuffed Dates
  • 1 – 14oz can chickpeasdrained and rinsed
  • 1/3cup cocoa powder
  • 1/4cup maple syrup
  • 3Tbsp tahinigluten free if desired
  • 2tsp vanilla extract
  • Pinch of salt
  • 12 Medjool dates
  • 1Tbsp toasted sesame seedsoptional
  • 3Tbsp cacao nibsoptional
  1. In food processor container, place chickpeas, cocoa powder, maple syrup, tahini, vanilla, and salt and blend until smooth. Taste and adjust level of sweetness if desired.
  2. Using knife, slice an opening in dates (without cutting them all the way through into two halves) and remove pits. Gently pry dates open with fingers and spoon in hummus filling. If desired, sprinkle sesame seeds and cacao nibs over stuffed dates.
