Chipotle Hummus
  • 3cloves garlic, peeled
  • 115-ounce can garbanzo beans, drainedreserve liquid
  • 2 whole chipotle chiliesplus 1 tablespoon adobo sauce
  • 1 1/2tablespoons tahini
  • Juice of 1/2 lime
  • 1small handful coarsely chopped cilantro
  • 1teaspoon ground cumin
  • 1/2teaspoon ground coriander
  • 1/4teaspoon ground cayenne pepperoptional
  • Salt and freshly ground pepperto taste
  1. Mince garlic in a food processor. Add garbanzo beans, chipotles and sauce, tahini, lime juice, cilantro, and spices. Process until smooth, scraping sides of the bowl as needed. Add reserved garbanzo liquid as needed. Taste and adjust ingredients as desired.
