Blackberry-Coconut Shake
  • 1 1/2 cups low-fat coconut ice cream or sorbet
  • 1cup low-fat (1 percent) milk or unsweetened rice milk
  • 1 small banana, peeled, sliced and frozen
  • 6-7 ounces fresh blackberries
  • 2tablespoons shredded coconut, for garnish
  1. In a blender or food processor, combine ice cream or sorbet, milk, banana, and all but 8 blackberries. Purée until thick and smooth. Immediately divide among cold glasses. Sprinkle with shredded coconut, garnish with reserved blackberries, and serve immediately.
