Ingredients
  • 8 sun-dried tomatoesnot packed in oil
  • 3teaspoons olive oildivided
  • 1cup sliced red bell peppersroasted is fine
  • 1/4teaspoon crushed red pepper flakes
  • 1/2pound bison sirloin or flank steakcut into thin strips
  • 28- to 10-inch 100 percent whole-grain pitas
  • 1cup arugula
  • 1small yellow bell pepperthinly sliced
  • 1/4cup feta cheesecrumbled
Instructions
  1. Place sun-dried tomatoes in a bowl and cover with hot water to soften for 5 minutes. Drain and transfer to a blender with 2 teaspoons olive oil. Blend until well chopped. Add roasted bell peppers and red pepper flakes. Process lightly, leaving peppers in larger chunks. Season with salt and pepper.
  2. Heat remaining 1 teaspoon oil in a skillet over medium-high heat. Add bison and sauté, allowing to brown slightly, about 3–5 minutes.
  3. lice open pitas and spread with red pepper sauce. Divide cooked bison, arugula, and yellow bell pepper among pitas. Sprinkle with feta cheese and serve.
