Asian Shrimp Hobo Packets
  • 1pound raw shrimp, peeled and deveined
  • 2teaspoons grated fresh ginger
  • 1tablespoon gluten-free teriyaki sauce
  • 1teaspoon chopped garlic
  • 2cups broccoli florets
  • 1 onion, cut into eight wedges
  • 2 carrots, cut into 1/2-inch-thick slices
  • 1/2pound sliced shiitake mushrooms
  • 4tablespoons toasted sesame oil
  • Crushed red pepper flakesoptional
  1. Place four 16×16-inch pieces heavy-duty foil on a work surface. In a bowl, combine shrimp, ginger, sauce, and garlic; season with salt and pepper.
  2. Divide broccoli, onion, carrots, and mushrooms among foil pieces; drizzle each with 1 tablespoon sesame oil, a generous sprinkle of salt, and desired amount of red pepper flakes. Divide shrimp mixture among foil pieces, placing over vegetables.
  3. Bring two opposite edges together and fold over twice to create a tight seal. Pull up open edges and fold to seal, pressing foil almost flat against food (leave a little room for steam). Wrap packets in a second sheet of foil. Chill until ready to cook.
  4. Place packets in hot (not flaming) coals. Cook 8–12 minutes, rotating twice. Carefully remove packets from coals and place on plates. Let cool 5 minutes. Avoid escaping steam when opening.
