Apple, Raspberry, and Frisée Salad
  • 2 1/2tablespoons extra virgin olive oil
  • 1 1/2tablespoons rice vinegar
  • 1tablespoon lime juice
  • 1/2 tablespoon agave nectar or honey
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper
  • 3cups frisée
  • 5cups mâche
  • 1 sweet-tart red apple, such as Gala or Braeburncored and sliced
  • 3/4 cup fresh raspberries
  • 2 tablespoons (1 ounce) crumbled goat cheese
  • 2-3 tablespoons toasted chopped pecans
  1. Mix all dressing ingredients together in a small bowl. In a large salad bowl, combine frisée, mâche, apple, raspberries, goat cheese, and pecans. Drizzle with about three-fourths of the dressing and toss gently.
