Apple and Root Vegetable Slaw
  • 2 Granny Smith apples
  • 1 medium rutabaga
  • 1/2 medium celery root
  • 2 tablespoons fresh lemon juice
  • 1/2 cup coarsely chopped flat-leaf parsley
  1. Core apples; trim and peel rutabaga and celery root.
  2. Coarsely grate apples and vegetables by hand or with a food processer fitted with a grater disc.
  3. Toss in a large bowl with lemon juice and parsley.
