Amaranth Cardamom Porridge
  • 3 apples: Pink Lady, Fuji, Honeycrisp or apple of choicecored and diced
  • cups (10½ ounces) amaranth
  • ½cup dates or raisinschopped and pitted
  • 1teaspoon cinnamon
  • ½teaspoon cardamom
  • ½teaspoon salt
  • 1cup water
  • 3cups almond milk (or milk of choice)
  • 1teaspoon vanilla
  • ¾cup toasted pecans
  • Maple syrup
  1. In the slow cooker, combine apples, amaranth, dates, cinnamon, cardamom and salt; stir well to coat apples.
  2. In a bowl, whisk water, almond milk and vanilla. Pour over apple mixture.
  3. Cover and cook on low for 6–7 hours (or overnight). Before serving, stir porridge.
  4. Serve with pecans, syrup and more milk.
