Good Morning Muesli
Gluten free & vegan
  • 1cup gluten-free rolled oats
  • 1large Granny Smith apple, cored and grated
  • 1cup favorite unsweetened plant-based milk(almond, cashew, coconut, rice, etc)
  • 1cup favorite unsweetened dairy-free yogurt(soy, almond, coconut, etc.)
  • 1/2tbsp vanilla extract
  • 2tbsp flaxseeds
  • 2tbsp chia seeds
  • 1/2cup chopped unsulfured dried apricots
  • 1/4cup sliced natural almonds
  • 1/4cup raw pumpkin seeds or sunflower seeds
  • 1/4cup unsweetened shredded coconut
  • 1/2tsp ground cinnamon
  • pinch of ground nutmeg
  • 1cup halved or quartered strawberriesfor garnish
  • 1cup blueberriesfor garnish
  • 1/4cup small mint leavesfor garnish
  • 1/4cup chopped pistachiosfor garnish
  1. In large airtight container, stir together oats, apple, milk, yogurt, vanilla extract, flaxseeds, chia seeds, apricots, almonds, pumpkin or sunflower seeds, coconut, cinnamon, and nutmeg until thoroughly combined. Cover container with lid and refrigerate overnight. Muesli may be stored, covered, in refrigerator for up to 3 days.
  2. When ready to serve, divide among serving bowls and top with berries, mint, and pistachios.
